Bobbatlu are made of using the filling ingredients:-1.Bengal gram(chickpea/chanadal)
2. Wheat flour (which we use for puri)
3. Sugar (or jaggery can also be used instead of sugar)
4.Ghee or oil
5. Water
The following procedure is to be followed step by step.
Step 1.
Firstly add the water and small amount oil to wheat flour in sufficient amount to make it like a dough for puri and need it well and keep it aside for 10 minutes.Step 2.
Boil the bengal gram(chickpea) until they become soft.Then take sugar in another vessel and add some water until all the sugar get wet i.e, sugar should not be submerged.
Then turn on the flame and stir the mixture of sugar and water until sugar dissolved and get a sticky or thread forming or one string consistency.Step 3.
Add the boiled chickpeas to the sugar mixture in proportion and mix and ground them to a paste. you can also add some cardamom powder. The paste should not be slurry it should be like soft dough.Step 4.
Take the flour dough and knees it well once again. Take some portion of dough and make a thick puri using oil and stuff the bengal gram or chickpea paste in the middle and close the puri from all side around the paste.
By using your hands make that into a flat one as wide as you can without making the paste seen out.
Similarly make some more Bobbatlu.Step 4.
Heat the tawa/pan on stove and add some ghee on it and roast the Bobbatlu on medium flame on both sides.
Take it out into the serving plate. The delicious Bobbatlu are ready to serve. Ghee is usually served with Bobbatlu.
